And we are all very busy this time of year

The Turkeys are Coming!


At Least 1000 to
Long's Meat Market!


We are talking turkey this month! Due to popular demand we have ordered 1000 fresh Shelton turkeys for our customers for the Thanksgiving holiday. Orders are on a first come first serve basis and will be within a 2lb range of the weight that you order between 10lb and 30lb.

Shelton turkeys are well known to be raised in outdoor range pens to give the meat a firmer texture. The birds are not fed any antibiotics, artificial growth stimulants, or animal protein. Shelton's has been producing quality poultry products for over 75 years.

Rogue River Blue cheese is in and our prices are $10 per pound less than our competition markets in Eugene. We can make holiday trays as well as BARBQ sandwiches, or other types with our Boar's Head and other meat products in our Deli.

Rib Eye Fajitas on the Grill
1 teaspoon ancho chili powder
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 1/2 to 2 pounds rib eye steak, trimmed of any fat, if necessary
1 medium white onion, cut in half, peeled, then sliced into 3/4 inch wide strips
1 medium green bell pepper, cored, seeds and white pith removed, cut into 1/2 inch strips
1 Tablespoon grape seed or vegetable oil, to drizzle over vegetables
In a small bowl, mix first four ingredients together. Sprinkle about half of the spice mixture over steak, patting down to adhere. Turn steak over and repeat. Let steak set at room temperature about 15-30 minutes. Place onion and peppers in a medium bowl, drizzle with oil, and toss to coat. Set aside.
Preheat grill to medium high or heat large cast iron skillet to medium high. Add meat to hot grill in an even layer, then add onion and pepper mixture on top of that. Close grill and let cook 3 minutes, undisturbed. Toss meat and pepper/onion mixture together and continue to cook until meat is at desired amount of doneness for you, 3 more minutes for medium. Remove mixture from grill, tent loosely with foil, and let rest 5 minutes. Serve with fresh made flour tortillas, pico de gallo and guacamole.

Welcome to The Butcher's Blog October issue!

The fall season is upon us as we welcome students back and enjoy the Duck's victories. In this issue we will feature our meat packages, the "Sweepsteaks" drawing for two 14oz rib eye steaks, weekly events such as our wine tasting and rotisserie chicken,  meat recipes from a local chef, and more.

Meat Packages -
Beef, Pork, Lamb, and Chicken

Our meat packages are becoming better known and help stretch your dollars. Choose your own combo with three packages or order in bulk and save money. We are now offering special prices for meat packages, whole or half carcass, and natural luau hogs. Call ahead to place an order or ask questions. There is a one week lead time needed for whole hogs to assure sizing. All of our prices include cutting and wrapping. Yes, the spelling is intentional as we have regular drawings to win two 14 oz rib eye steaks. The dates are announced on Facebook, so if you missed a deadline he will add you to the next drawing list.

Wine Tasting Friday's 4pm-6pm

Last month we tasted Erath Pinot Noirs including their Estate selection, as well as some
Heron Cabernet 2009 , Heron Chardonnay 2011 and Cline Mourvedre Rose 2011. The tasting is free and we have a large wine selection of reds, whites, imported and local/ Oregon in our deli.

Say Cheese
Cheese and wine are an excellent combination before or with a meat recipe.  You may be surprised at the large selection of cheeses in our deli. We feature Oregon creameries such as Rogue, Willamette, and Cheese Louise, as well as imported such 
as Irish, British, and Italian.  Ask our Deli expert Dave about wine and cheese pairings for that next special occasion.

Free Range Rotisserie Chicken on Wednesdays 4pm-6pm

We usually sell out of out free range rotisserie chickens that we regularly schedule on Wednesdays from 4pm - 6pm. However, you can also special order a rotisserie chicken any other time and we will prepare it for you in advance for you to pick up.

Sandwiches in the Deli? Yes!   

We offer sandwiches to go or to enjoy here at our tables in our Wine and Cheese Shop and Deli.  We have an excellent selection of deli meats such as Boar's Head, and gourmet condiments for different tastes.  
  What are some of the leanest cuts of red meat?
 For the leanest red meat cuts, look for those with “loin” in the name: Sirloin tip steak, top sirloin, pork tenderloin, lamb loin chops. Ask our butchers about our lean cuts.

Beef: Also look for round steaks and roasts, such as eye round and bottom round; chuck shoulder steaks; filet mignon; flank steak; and arm roasts. Choose ground beef labeled at least 95% lean.
Pork: Lean cuts include loin roasts, loin chops, and bone-in rib chops.

Let's Talk Exotic Meats

Hosting a Ducks party? How about Wild Boar Enchiladas?
Discover new tastes of unusual meats for your own enjoyment, nutritional benefits, or for something different at your next dinner party. Meats such as buffalo, venison, and rabbit are already popular in Oregon and most of our exotic meats are raised here in Oregon. Other unusual meats such as ostrich, emu, veal, seasonal venison and elk, Guinea Foul, quail, and poussin are becoming better known as they are being purchased with increasing frequency from our new freezer at our Eugene store. Muscovy Duck is usually fresh in our poultry section.

Featured Exotic Meat: Fermín Ibérico de Bellota Pork
Fermín Ibérico de Bellota Pork is a world-class food product—some consider it to be one of the four must-have items that transcend cuisine, along with foie gras, caviar and truffles.  We are proud have a supplier who is the leading distributor of uncured Fermín in the Pacific Northwest, as well as carrying the cured line upon which the Fermín reputation is built.
Ibérico de Bellota is all free-range, acorn-fed pork from the Salamanca region in Spain.  Fermín goes even further than its competitors—by guaranteeing that every pig they raise is genetically 100% Ibérico.  This ensures the authenticity of their end-product and the flavor that comes with it.  Fermín pork is a deep shade of red in color—nearing the color of beef.  The fat that builds during the fattening period, or montañera, creates the most tender and tastiest cuts possible. 
Uncured Fermín pork opens up a world of possibilities for the chef.  Because of the genetics of the Ibérico breed and the artisanal process in the Fermín cutting room we are able to offer rare cuts that don’t exist within the United States.  Furthermore, because each pig is individually tested for trichinosis, chefs can use raw and semi-raw applications with this special pork.
Emu
Emu are high in protein and iron, while lower in fat, fatty acids and cholesterol than many other kinds of meat. For this reason Emu has been a super food for athletes for years. The lean nature of emu makes cooking it a challenge—albeit one that any home chef or professional chef is up to as long as they understand that it is best prepared at medium-rare
.
The main benefit of emu is the delicious flavor. We consider it a lovely blend of duck and beef. Emu has the richness of red-meat with the health benefits of a poultry product. The Premium Loin cuts are tasty with a quick grilling and the round cut is better slow-cooked at a low heat in the oven with a tasty braising liquid. Emu readily takes to whatever flavor or cuisine you prefer—we like it medium rare, and rested, with a huckleberry and pepper sauce!

Seasonal Elk - September-October
One of the highlights of our busy autumn season is the arrival of Roosevelt elk.  These animals are the biggest elk on the continent of North America.  The males are just under 1000 lbs and have been known to grow as big as 1,300 lbs in the Alaskan wild.  They are raised free range on Western Oregon farms, where they can freely roam the hills and streams that dominate our landscape.  This peaceful life, along with the natural terrain they are used to, make Roosevelt one of the richest, yet leanest proteins we offer.  It is a highly sought after animal, so be sure to call us in advance and reserve an order based on availability.

Ostrich
Ostrich is currently raised for its rich meat in Southern Hemisphere countries like Austrailia and New Zealand.  Ostrich contains 90% less fat than beef, yet it retains the succulent, red-meat flavor that diners love.  Ostrich also shrinks less than other types of red-meat which makes it ideal for controlling food cost, and the perfect meat for hamburgers and steaks.

A Day in the Life of a Butcher

“It’s not unusual to have a 10 hr day, with a trained team of employees who are briefed in daily morning educational meetings on product features, such as why we have chosen to present the quality meat products that we carry, customer service ideas, and our deli products. Parking Lot

Our weekly Saturday parking lot BarBQ will be continuing in July. We're cooking up hot dogs, hamburgers, half chickens and brats from 11am – 3pm, all at reasonable prices! Craft beers and Oregon wines are also available at our deli.



The Whole Hog – Planning a Luau?
Tis the season for luaus and every year we get orders for hogs. We can get 40-100lb hogs and need to have a ten day lead time for ordering. Read about cooking a Kalua Pig in a pit. (That’s Kalua, not Kahlua). Pricing can be found here on our website.

Friday Night Free Wine Tastings
Due to popular demand we are continuing to offer free wine tasting every Friday night from 4pm to 6pm. We offer a large selection of both local, regional, and imported wines in our deli, as well as a great selection of Oregon craft cheeses and imports. Our dried meats include Boar’s Head products, Knee Deep Cattle Company beef jerky, and other select products.

Hello Summer – Goodbye Rain (well, almost)


It’s officially Summer this month and this is the season for BarBq’s and picnics. We have a great selection of meats for both of those. Ask us for ideas. Planning to go to concerts, festivals, or other outdoor events? Try our dried meats and cheeses from our Deli with a bottle of chilled white wine. Speaking of BarBQ’s, our weekly Saturday parking lot Summer BarBQ starts this week, June 2nd and we will be cooking up hot dogs, hamburgers, half chickens and ribs from 11am – 3pm, all at reasonable prices!
